Blue corn tortillas are made in-house daily, from heirloom blue corn grown and milled in Texas. Fine homemade sauces are made from fresh green tomatillos, authentic red mole and a collection of succulent chili spices. The list goes on, as does the passion our chefs have for coming up with ideas for exciting new creations….

Here’s Looking At You, Lada
It was the Aztecs though who created the first true enchilada by taking chili peppers and grinding them into a spicy paste, which tortillas would then be dipped in and filled with beans, eggs and fish.
Eventually, the Spanish came to conquer Mexico and replaced almost all of the Aztec culture. However, they held onto the cuisine and added new ingredients to the enchilada like cheese, chicken and pork.
By the time Mexico declared independence from Spain, the enchilada had pretty much become the national dish. And when the US annexed Texas, the recipe soon rolled its way across the border.
